Help everyone and push Blizz so they change this quest so you can switch rings before exalted, do a post there :

Here's a trick to get two different versions of this ring in your inventory:

1. Delete the +1% hit ring.
2. Go to the dragon in Tanaris and get a new one.
3. Use the 45 scarabs to exchange the ring for the one you want (I wanted the +defense one as well)
4. Go to Blizzard's Item Restoration page, and restore your deleted +1% hit ring. Note, there is usually a small delay before you can restore items. Don't get scared!
5. Pick it up from the mailbox.

Voila. You now have both on of the best hit rings and the best defensive rings.
